We made this on a cold day. I wanted hot zucchini and sauce. I pressed the garlic and sautéed in a tablespoon of olive oil, threw in some sliced up mushrooms along with a few T of the hot water I soaked the sundries tomatoes in. I let that gentle simmer while I blended the remaining ingredients in the cuisinart. Then added the tomato mixture to heat with the mushrooms. Delicious warm alternative to the raw version.

Love the sauce for this one. I don’t have a spiralizer so I used a speed peeler and as it’s about 0 degrees outside I heated the courgettes up. Yum yum

Hello Trish, unfortunately, we don't have a nutritional value of the recipe, our main focus is on nutrients and the use of whole foods for our body rather than analyzing recipes in a nutritional breakdown. Eat healthily, eat well ~ Ivory :)
