One of our absolute favorites! It’s quick to make and tastes just as good as the regular pasta version, without the heavy feeling post-meal!

Serves: 1

Why it’s so good for you:

Zucchini provides you with lutein and zeaxanthin, two carotenoids that promote healthy eyesight! They’re also a source of magnesium, folate and fiber.

Featuring:
James Colquhoun

Would this be a very low carb meal?

Hello Trish, unfortunately, we don't have a nutritional value of the recipe, our main focus is on nutrients and the use of whole foods for our body rather than analyzing recipes in a nutritional breakdown. Eat healthily, eat well ~ Ivory :)

I love this recipe so much, I was wondering if the sauce would keep if I made extra and froze it? I have so many beautiful tomatoes in my garden right now!

Hi Tina, it would keep in the fridge for up to a week and approximately 2-3 months when frozen :) ~ Iris

Omg so delicious - but are you sure the sauce is just for one serve ? That's 1/4 oil ! The good oil but thought it was more than 1 serving

Hi Kathryn! Yes, this is for one serving only but if you are finding that the measurements are more than enough, always feel free to decrease the amount according to your taste. Suggested measurements or serving sizes of the recipes are merely a guide, so just adjust accordingly and you'll be good to go :) Happy 21D! ~ Jasmin

I’ve had raw spiralized zucchini noodles once before and wasn’t crazy about them, so I wasn’t expecting much from this meal. Turns out I was wrong. Delicious!! I’ll be making this on s regular basis come summer. I decided to only use 1 zucchini, and that was plenty. Hopefully the left-over sauce will freeze well. Thanks for another fantastic meal!

I quadrupled the recipe, but only doubled the oil & salt and it was still amazing for my family of 4 with extra for leftovers! 4 tsp salt would have been way too much. Have others noticed that multiplying recipes is tricky?
