These all look so good! I get sick of eating plain veggies. Should I worry about weight gain or eating saturated coconut oil?

Hi Lynda, coconut oil contains short-term, medium-chain saturated fatty acids (MCFAs), which is a "healthy" form of saturated fat compared to trans fat. When consuming MCFA fats in coconut oil, our body metabolizes these fats in the liver, immediately converting them into energy (fuel for the brain and muscle function) rather than storing them as fat.
