Looks amazing and will definitely give it a go. Just wish the portion sizes were smaller though. Think I might need to quarter everything!

So glad to find another recipe for making sandwiches. I really love sandwiches as a meal along with some homemade minestrone or such. This was my lunch today and I loved it. Had it on Essene bread that was toasted, piled high with sprouts too. Jason and FMTV has me eating good today!! :) Yum Yum!!

I am assuming if you don't have young Thai coconuts you can use all bottled coconut water? Also since there is so much of the sauce and it won't all be used in this recipe, what else can it be used for?

Hi Kandy, Yes, you can use organic coconut water instead. But due to the different consistency to the young thai coconut you may need to use a little bit less to achieve the right texture :)
