Hi Jill, thanks for asking. You may omit the tomatoes but it may turn out dry. To resolve that, you may also try to add vegetable stock and try to adjust the flavor to your liking. Let us know how it turns out! ~ Jasmin

Almost identical to my recipe. Your vegetables are chopped in larger sizes than mine so I’ll try that. It may make the veggies the star versus the beans. Thank you!

Are there negative effects to eating canned foods? I have tried to stick to fresh and frozen for several years as I have heard canned beans, fruits and vegetables have no nutrients and too many preservatives?

Hello Madeleine, it is our recommendation and hopes that everyone would choose ingredients that are fresh, locally sourced and organic. There are BPA free cans or glass jar options available for many ingredients such as beans. Unfortunately, sometimes it takes a little bit of hunting around to find them, but it is certainly a healthier option. Hope this helps :) ~ Joyce

Very easy to make and it was delicious. My whole family ate it. No leftovers for today but I still have some sauce from the Mac and Cheese for today's lunch.
