I make cheese from my own goat’s milk, and I have frozen the whey. Does the culture need to be kefir, or could it be whey from my cheese-making? Thermophilic, mesophilic, yogurt whey...?

Lovely. Any idea how long this could be stored in the fridge for? For example could I make a weeks worth all in one go, store it and take one out each morning?
