This healing vegetable soup is made with either chicken bone broth or vegetable broth, for a vegetarian version.

Chicken bone broth is rich in minerals that support the immune system and contains healing compounds like collagen, glutamine, glycine and proline. The collagen in bone broth heals your gut lining and reduces intestinal inflammation. Collagen also supports healthy joints, skin, hair and nails.

Nutritionally, this vegetable soup is packed full of many water-soluble vitamins as well as dietary fiber and a range of minerals. It also helps to regulate the digestive tract and includes detoxifying vegetables and alkalizing greens like kale, broccoli, zucchini, green beans, cilantro and parsley.

Surprisingly, I liked this soup even though I can't stand cilantro. It was tasty. But honestly, after the filling breakfast smoothie, I was left hungry with this and lunch. Hoping the other days are more filling.

When I made the healing detox broth (no chicken) it reduced down so much . I was only left with about 3 1/2 cups . That was simmering it for 3 hours. What am I doing wrong ?

Hi Judith! It's possible that there's no lid when you were simmering the broth and the water has evaporated. Just make sure the lid is weighted down to prevent this the next time you try it. Best of luck! ~ Jasmin
