Thanks for the great recipe Cindi! Our family generally follows a very plant based paleo type of eating, this recipe fits right in. Wonderful use of healthy fats and a rainbow of colors. By the way, I have that same little chopper and LOVE it for all sorts of quick chopping, especially for doing onions and celery for soups!

Love the coffee I'll try that. Also love the idea of the roast sweet potatoe on the salad. Do you think sweet potatoe has enough nutrients on its own to have as a meal eg soup?

Yummy! Great point about the corn! So if it's organic does that mean it's also GMO free? I've already been a bit confused about that point.

Hello Anja, Glad to hear that you love this recipe as much as we do! You should be able to purchase a herb chopper like the one Cyndi uses from home ware/department stores or alternatively online. Another easy way to chop herbs is to hold them in a bunch and use a pair of scissors and snip into a pile. I hope that helps :)
