How essential is the eggplant to the taste of this? I can't eat it, so if it is really necessary, I'll move on to a different recipe.

Hi Cheryl, you could just omit the eggplant and increase the mushrooms and add an extra zucchini or any other veggies you have on hand. Hope this helps :) Enjoy! ~ Iris

Hi Nancy and Anita, we would suggest using coconut cream as an alternative or if you and your family consume dairy, some organic thickened cream will also work :) Hope this helps! ~ Iris
