What kind of lentils, green/brown are heartier and maintain their shape when cooked, whereas red lentils soften into a puree. Thanks!

How essential is the eggplant to the taste of this? I can't eat it, so if it is really necessary, I'll move on to a different recipe.

Hi Cheryl, you could just omit the eggplant and increase the mushrooms and add an extra zucchini or any other veggies you have on hand. Hope this helps :) Enjoy! ~ Iris

Sounds wonderful! What could I use in place of cashews for the cream sauce? I’m allergic to peanuts and cashews.
