Coconut Fish Curry

Exclusive on FMTV

Series: Food Matters Main Meal Recipes | Episode: 21 | Runtime: 6m 1s | Release date: 2016

Serves: 2

Why it is good for you:

Traditional curries can often leave you feeling tired and sluggish. We’ve swapped the darker meats for white fish or chickpeas and omitted the coconut milk, for a fresh feel on a usually heavy dish. The blend of exotic spices stay consistent with traditional flavors.

We encourage you to make your curry pastes from scratch as most store-bought curry pastes, although temptingly convenient, contain artificial additives, sugar, salt and processed oils.

Featuring:
James Colquhoun

Hi! I can't get mahi-mahi where I live. Can you suggest a good substitute for those of us in Northern Europe? Many thanks.

That was delicious! I make a lot of curry so this was a nice surprise. I didn't have garamasala so I used a tsp of Chinese 5 spice, 1/4 tsp chilli powder and tbl of curry powder. Also replaced onion (fodmap) with leek, and used haddock as more common in this country. Added carrot and kale for veg.

This was delicious. I have lovely spices to use but often find recipes that call for store bought curry pastes .... it was nice to make a healthier one and this tasted like restaurant quality. Add chopped zucchini in for some veg. Excellent recipe! I will be making this often:)

Hello Annie, my apologies , at this stage the recipes are available to view online. If you wish to print them, we suggest the following: Selecting the text which you wish to print with your cursor. Right button click the text and choose the ‘Print’ option. Within your printer settings you should be able to tick ‘Selection Only’. Alternatively, if you would like to format the text, right button click the text and select ‘copy’. Then open a new Word document or Text editor, right button click and select ‘paste’. You will then be able to print from there. We may look in developing this in the future, kindly stay tuned ~ Ivory :)
