This cauliflower mash is more nutritious than your typical mashed potato. White potatoes have a high GI (glycemic index) which raises your blood sugar levels very quickly. Cauliflower is a great low GI alternative to white potato and this cauliflower mash is a great alternative to mashed potato - especially for those with diabetes or irregular blood sugar levels.

Easy is good! Especially when it's tasty too! I also add a spoonful of Savoury Yeast flakes, for a change, or chopped parsley (because I love parsley and it's so good for you ) :)

In all the food making videos, it looks like there is a lot of food stuff still left in those little measured out bowls, hopes its used too.

You can alter this recipe a bit by adding a sprinkle of curry and onion powder to it.

This looks so easy. I will definitely be making this. Mashed potatoes has been one of my favorite foods since I was a child, but alas, it's time to cut back on those carbs to lower the ol' blood sugar. I love cauliflower too, though, so being able to use cauliflower to make a mock mashed potato recipe is terrific! Thanks so much!

I tried it tonight for dinner, and it was absolutely fabulous! It was so easy to make, even easier than mashed potatoes! This is a definite winner, and I will be making this often. So delicious!

So easy, and so yummy! I used ghee instead of butter, and with a bit of salt it made a perfect accompaniment to my meal.
