Sweet Potato Breakfast Muffins

Exclusive on FMTV

Series: Cafe Breakfasts You Can Make At Home | Episode: 3 | Runtime: 01m 52s | Release date: 2017

This segment features: Rachel Morrow.

Your favorite cafe mostly likely always has a tasty breakfast muffin on the menu that’s a good option to go with. Breakfast muffins are a nourishing and inexpensive option, but make them yourself, save some dollars and ditch the gluten-filled cafe version!

This recipe can easily be tweaked. Turn it up a notch by adding some fresh spinach, fresh herbs, cherry tomatoes - the list is endless!

Serves: 6

Why It's Good For You:

We’ve removed the gluten from our breakfast muffin version and upped the nutrient density with one of our all-time-favorite vegetables: the sweet potato!

Sweet potatoes are rich in essential vitamins and minerals and are very versatile. They're loaded with antioxidants such as carotenoids, which are precursors to vitamin A in your body. Vitamin A is essential for healthy eyes, boosted immunity and protects you against the effects of aging. Bet your standard breakfast muffin from the cafe doesn't offer you a side of those benefits ;-)

Hello Micki, you can use nut milk to replace the coconut cream such as almond or cashew milk. We do have a delicious recipe of Cashew cream that you might like here: https://www.fmtv.com/watch/comfortfoods-cashew-cream or this one here: https://www.fmtv.com/watch/2-ingredient-cashew-cream-two-ways ~ Ann

Hi, is it possible to freeze these muffins please? If not how long would they keep in the fridge? Thanks 😊

Hi Joe! Yes, you may allow the muffins to cool down to room temperature after baking. Then, transfer the muffins into a glass storage containers and keep in freezer up to two months. Enjoy making them! ~ Jasmin

Gonna try this. Eggs are healthy “for me”. I love that FMTV offers a wide variety of recipes for everyone. No “boxes”. Just a plethora of recipes to mix and match and create what works for “your body”. Thank you FMTV. I would gladly give up my Netflix subscription, if necessary to keep you. :)

Hi Elizabeth! Best to use coconut cream which is much thicker and richer. It is made from simmering four parts shredded coconut in one part water. ~ Jasmin ❤

How is the sweet potato muffin recipe vegan if there are eggs in it? Am I missing something?
