I made the Miso Eggplant Salad, it was very tasty, a bit spicy perhaps for the kids, they weren't impressed with the cabbage, but I managed to put the left-overs in a big salad, mixed with everything the next day and the kids ate it. The taste of the miso I guess was dulled a little as it was competing for space with all the other ingredients, but for me the miso really lifted the salad. I liked your energy chef whilst showing us how to cook, thank you.

Ohhhhhh Chef Cynthia you’ve done it again! I’m am beyond excited about these salads!!!! The first one my husband wants to try is the Vietnamese Noodle Salad. Then for me the Miso Eggplant Salad. We will definitely be trying all of them. Thank you for being so grounded with your cooking. And thanks for the tip on where to get a good cutting board. You are an inspiration ❤️

Oh my goodness. I think my picky husband will even like these. And your love of good food and preparing them is contagious. Would you please post the recipe for the ranch dressing? TY
