Raw Pizza

Who would've thought that pizza could actually be healthy? This pizza is raw, low glycemic and delicious!

Cilantro has long been used as a remedy for internal health issues and like many super foods, the use of cilantro can be seen throughout the centuries. It is said the herb was used to treat a multitude of ailments, everything from intestinal issues to bad breath as well as livening up a lazy libido.

Ingredients

(use organic ingredients where possible)

CRUST

  • 2 cups red bell peppers, minced
  • 1 cup cilantro, minced
  • 1 tbsp cayenne pepper
  • Himalayan salt
  • ¼ cup hing
  • ¼ cup Italian seasoning
  • Black pepper
  • 2 cups flax seed meal/flour

VEGETABLE MEDLEY TOPPING

  • ½ cup red bell peppers, diced
  • ½ cup zucchini, diced
  • ¼ cup cilantro, diced
  • ¼ cup Italian seasoning
  • Cayenne pepper
  • 2 tbsp lemon juice
  • Olive oil
  • Salt & pepper to taste

TOMATO SAUCE

  • 2 cups sun-dried tomatoes
  • 1 red bell pepper
  • Olive oil
  • Lemon juice
  • Kalamata olive water
  • Hing
  • Cayenne pepper
  • Italian seasoning
  • Tomato soaked water (water from soaking the sun-dried tomatoes
  • Black pepper
  • Himalayan salt

WALNUT CHEESE

  • 1 bunch of cilantro, minced
  • 4 cups walnuts, chopped
  • Lemon juice
  • Olive oil
  • Kalamata olive water
  • Italian seasoning
  • Hing
  • Salt

Directions

  1. Combine all dry ingredients in a large bowl. Toss with hands. 
  2. Add wet ingredients and massage to form a dough. On a reflex sheet, work the dough into a flat, circular crust shape.
  3. Remove crust from reflex by placing the wire mesh sheet and tray overtop, flip over and peel the reflex sheet off.
  4. Dehydrate for 3+ hours.  Note: If you like a crispier base, dehydrate for up to 12 hours.
  5. For the vegetable topping, place all ingredients onto a dehydrator tray and dehydrate for about 3 hours.
  6. Combine tomato sauce ingredients in a blender, and blend to desired consistency.
  7. For the walnut cheese, grind the walnuts in a food processor, add all other ingredients and blend until smooth.
  8. On dehydrated pizza crust layer on cheese, tomato sauce, and vegetable medley topping.
  9. Slice and serve.
